Ingredients
The following ingredients have 4 Servings
- Low-calorie spray oil
- 1 Red onion, chopped
- 1 Carrot, peeled and chopped
- 1 Celery stick, chopped
- 3 x 400g Cans peeled plum tomatoes
- 2 tbsp Tomato purée
- 1 tbsp Sweetener
- 600ml Vegetable stock
- A handful of fresh basil leaves, finely chopped
Instruction
- Spray a large saucepan with low-calorie cooking spray and sweat the red onion, carrot and celery for 5 minutes. Add the canned tomatoes, tomato purée, sweetener and stock and bring to the boil. Cover, reduce the heat and simmer for 15 minutes.
