Ingredients

The following ingredients have 4 Servings
  • Low-calorie spray oil
  • 1 Red onion, chopped
  • 1 Carrot, peeled and chopped
  • 1 Celery stick, chopped
  • 3 x 400g Cans peeled plum tomatoes
  • 2 tbsp Tomato purée
  • 1 tbsp Sweetener
  • 600ml Vegetable stock
  • A handful of fresh basil leaves, finely chopped

Instruction

  • Spray a large saucepan with low-calorie cooking spray and sweat the red onion, carrot and celery for 5 minutes. Add the canned tomatoes, tomato purée, sweetener and stock and bring to the boil. Cover, reduce the heat and simmer for 15 minutes.
