The following ingredients have 4 Servings
- Air Fryer Oven

- Air Fryer Grill Pan

- 5 Weight Watchers Wraps
- 50 g Grated Cheese
- 300 g Chicken Breast
- ½ Small White Onion (peeled and diced)
- 1 Tbsp Taco Seasoning
- 1 Tsp Chicken Seasoning
- 2 Tsp Paprika
- 1 Tsp Garlic Powder
- Salt & Pepper
- 3 Garlic Cloves (peeled)
- 1 Red Pepper Chilli (seeds removed)
- 1 Jalapeno (seeds removed)
- 400 g Tinned Tomatoes
- 1 Tbsp Taco Seasoning
- 1 Tsp Paprika
- Quark
- ½ Avocado (optional)
- Salt & Pepper
Instruction
- Chop your chicken breasts into strips similar to chicken stroganoff. Load them into a bowl with your onion and your other chicken for enchiladas ingredients. Mix well with your hands and load into your air fryer basket or grill. Cook for 8 minutes at 180c/360f.
- While your chicken is cooking load your enchiladas sauce ingredients into a blender. Blitz until you have a smooth creamy enchiladas sauce.
- When the chicken is done add the wraps to the air fryer and cook for 90 seconds or until slightly crispy at 200c/400f.
- Load your chicken into a clean mixing bowl and add a little enchiladas sauce at a time until you have a creamy chicken mixture.
- Add a tablespoon of enchiladas sauce to the bottom of your air fryer baking pan. This will stop of the enchiladas from sticking during cooking.
- Roll up the enchiladas and tuck them in. We fitted 5 into our baking dish and you will need to slice of the ends with a knife or scissors so that they will fit in the baking pan.
- Add the last of the enchiladas sauce on top and sprinkle with cheese.
- Cook for 25 minutes on the top shelf of your air fryer oven at 180c/360f.
