Ingredients

The following ingredients have 12 Servings
  • 1 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup palm sugar (or brown sugar)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup Skor bits
  • 3 tablespoons hemp hearts
  • 1 tablespoon flax
  • 1 egg
  • 3/4 cup milk
  • 1/3 cup vegetable oil or melted butter
  • 1/2 teaspoon vanilla extract
  • 1 cup mashed bananas

Instruction

  • Preheat your oven to 400 degrees Fahrenheit.
  • Whisk together the flour, oats, sugar, baking powder, soda,salt, skor bits, hemp and flax.
  • In a large bowl, beat the egg lightly. 
  • Stir in the milk, oil (or melted butter), and vanilla. 
  • Add the mashed banana, and combine thoroughly.
  • Stir the flour mixture into the banana mixture until just combined, don't over-mix! 
  • Line a 12-cup muffin tin with paper baking cups, and divide the batter evenly among them. The batter will be up to the top but you are going to get lovely over-the-edge crispy "muffin tops" with this recipe!
  • Bake at 400 degrees Fahrenheit for 18 to 20 minutes.
