Ingredients
The following ingredients have 4 Servings
- 2 cup water
- ¼ tsp salt
- 1 cup quinoa (rinsed)
- 4 tbsp sweet corn (frozen or fresh)
- 4 tbsp green peas (frozen or fresh)
- 1 tsp lemon juice
- 1 avocado
Instruction
- Over high heat, place a pot. Add water and salt, bring it to rolling boil.
- Add rinsed quinoa. Cook for 20 minutes in low heat.
- The well-cooked grain will get smashed in the fingers when pressed. Using the fork, gently fluff them up.
- In the microwave safe bowl, add frozen corn,peas, and salt. Cook it for 2 minutes or until they become softer. Thinly slice the avocados.
- In the salad bowl, add cooked Quinoa, corn kernels, green peas, and lemon juice .
- Gently combine them and top with avocado slices. And serve immediately.
