Ingredients

The following ingredients have 4 Servings
  • 2 cup water
  • ¼ tsp salt
  • 1 cup quinoa (rinsed)
  • 4 tbsp sweet corn (frozen or fresh)
  • 4 tbsp green peas (frozen or fresh)
  • 1 tsp lemon juice
  • 1 avocado

Instruction

  • Over high heat, place a pot. Add water and salt, bring it to rolling boil.
  • Add rinsed quinoa. Cook for 20 minutes in low heat.
  • The well-cooked grain will get smashed in the fingers when pressed. Using the fork, gently fluff them up.
  • In the microwave safe bowl, add frozen corn,peas, and salt. Cook it for 2 minutes or until they become softer. Thinly slice the avocados.
  • In the salad bowl, add cooked Quinoa, corn kernels, green peas, and lemon juice .
  • Gently combine them and top with avocado slices. And serve immediately.
