Ingredients

The following ingredients have 4 Servings
  • 20 oz can pineapple chunks
  • 1/3 cup water
  • 2 tbsp vinegar
  • 2 tbsp soy sauce
  • 1/2 cup packed brown sugar
  • 3 tbsp cornstarch
  • 1 large green pepper, cut into 1-inch pieces
  • 28 oz frozen beef or turkey meatballs
  • Hot cooked rice

Instruction

  • Drain pineapple juice into a 1 cup measuring cup. Add water to measuring cup so there is 1 full cup of liquid.
  • Add to pineapple juice to a large rimmed skillet.
  • Add 1/3 cup water, vinegar, soy sauce, brown sugar, and cornstarch. Whisk till smooth.
  • Add pineapple, peppers, and meatballs to skillet.
  • Cover and cook over medium heat for 20 minutes. Serve with rice.
