Ingredients
The following ingredients have 4 Servings
- 20 oz can pineapple chunks
- 1/3 cup water
- 2 tbsp vinegar
- 2 tbsp soy sauce
- 1/2 cup packed brown sugar
- 3 tbsp cornstarch
- 1 large green pepper, cut into 1-inch pieces
- 28 oz frozen beef or turkey meatballs
- Hot cooked rice
Instruction
- Drain pineapple juice into a 1 cup measuring cup. Add water to measuring cup so there is 1 full cup of liquid.
- Add to pineapple juice to a large rimmed skillet.
- Add 1/3 cup water, vinegar, soy sauce, brown sugar, and cornstarch. Whisk till smooth.
- Add pineapple, peppers, and meatballs to skillet.
- Cover and cook over medium heat for 20 minutes. Serve with rice.
