Ingredients

The following ingredients have 5 Servings
  • 1 tablespoon butter or oil
  • 1/2 pound andouille or other smoked sausage, chopped
  • 1 slice bacon
  • 1 cup chopped onion
  • 1/2 cup chopped green or red bell pepper, or use a combination
  • 1/4 cup chopped celery
  • 1 tablespoon minced garlic
  • 2 cups chicken stock or broth
  • 1/2 teaspoon Italian seasoning
  • 1/4 to 1/2 teaspoon Cajun seasoning (like Slap Ya Mama), or to taste
  • 1/4 teaspoon freshly cracked black pepper, or to taste
  • 1 large bay leaf
  • 2 or 3 (15.5 ounce) cans of light or dark red kidney beans, rinsed and drained
  • 2 cups instant rice

Instruction

  • Heat the oil in a large lidded skillet (about 4.5 quart/11 inch) over medium-high heat. Add the sausage and bacon until lightly browned, about 4 minutes. 
  • Add the onion, bell pepper, and celery; cook and stir until vegetables are tender, about 5 minutes. Add the garlic and cook, stirring constantly, another 2 minutes. 
  • Add the broth, Italian seasoning, Cajun seasoning, pepper and bay leaf. Bring to a boil.
  • Add the beans and rice, stir together well, reduce heat to medium low and cook, covered for 10 minutes, or until rice is tender.
  • Fluff with a fork, taste and adjust seasonings as needed; serve immediately.
