Ingredients

The following ingredients have 4 Servings
  • 1 package Smithfield Steakhouse Mushroom Flavored Pork (cut into one inch slices)
  • 3 tablespoon olive oil (divided)
  • Salt and pepper
  • 1/2 pound Brussels sprouts (quartered)
  • 2 sweet potatoes (cut into 1 inch cubes)
  • 1/2 pound baby red potatoes (quartered)
  • 1/4 cup dijon mustard
  • 1/3 cup maple syrup
  • 1 tbsp apple cider vinegar

Instruction

  • In a large skillet add 1 tablespoon olive oil and add the sliced pork and cook until no longer pink. Remove and set aside on a plate.
  • Add 2 tbsp olive oil. Add Brussels sprouts, sweet potato and baby potatoes. Sauté until almost fork tender.
  • In a small bowl whisk together the dijon mustard, maple syrup, and apple cider vinegar. Pour on top of the vegetables. Add the pork back to the skillet and heat throughout.
