Ingredients

The following ingredients have 4 Servings
  • 1 tablespoon chopped fresh bell pepper (red or green)
  • 1 tablespoon sliced fresh mushrooms
  • 1 teaspoon chopped onion
  • 1/3 cup fat-free mozzarella cheese
  • 3 slice pepperoni (optional)

Instruction

  • Coat a medium nonstick skillet with cooking spray; over medium heat, saute bell pepper, mushrooms, and onion 5 minutes, or until soft. Remove vegetables to a small bowl.
  • In the same skillet over medium heat, place cheese in center of pan in a 4-inch circle. When cheese starts bubbling, place vegetables and pepperoni, if desired, on top.
  • Cook 30 to 60 seconds, or until cheese is brown on bottom. Using a spatula, slide onto plate, then let cool 1 minute before serving.
