Ingredients
The following ingredients have 4 Servings
- 1.5 pounds boneless skinless turkey breast cutlets (about 4-5 thinly sliced pieces)
- 1 tablespoon Italian seasoning
- kosher salt and freshly ground pepper
- 3 teaspoons olive oil
- 1 cup diced heirloom tomatoes
- 2 tablespoons chopped basil
- 1 teaspoon minced garlic
- 1 medium shallot, thinly sliced
- 1/4 cup grated Parmesan cheese
- 2 tablespoons thick balsamic vinegar
Instruction
- Season turkey breast on both sides with Italian seasoning, freshly ground pepper, and kosher salt. In a large skillet over medium heat, add 2 teaspoons of olive oil. Once pan and oil is heated, add seasoned turkey breast to the skillet.
- Cook until turkey is golden brown on one side (about 5-7 minutes); flip continuing to cook until both sides are golden and cooked through, about 10-15 minutes total depending on the thickness of the turkey breast.
- While turkey is cooking, in a small bowl, mix together tomatoes, basil, garlic and shallot. Drizzle with a teaspoon of olive oil and season with black pepper.
- Serve turkey breast topped with tomato mixture, Parmesan cheese and a drizzle of balsamic vinegar.
