Ingredients

The following ingredients have 4 Servings
  • 1.5 pounds boneless skinless turkey breast cutlets (about 4-5 thinly sliced pieces)
  • 1 tablespoon Italian seasoning
  • kosher salt and freshly ground pepper
  • 3 teaspoons olive oil
  • 1 cup diced heirloom tomatoes
  • 2 tablespoons chopped basil
  • 1 teaspoon minced garlic
  • 1 medium shallot, thinly sliced
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons thick balsamic vinegar

Instruction

  • Season turkey breast on both sides with Italian seasoning, freshly ground pepper, and kosher salt. In a large skillet over medium heat, add 2 teaspoons of olive oil. Once pan and oil is heated, add seasoned turkey breast to the skillet.
  • Cook until turkey is golden brown on one side (about 5-7 minutes); flip continuing to cook until both sides are golden and cooked through, about 10-15 minutes total depending on the thickness of the turkey breast.
  • While turkey is cooking, in a small bowl, mix together tomatoes, basil, garlic and shallot. Drizzle with a teaspoon of olive oil and season with black pepper.
  • Serve turkey breast topped with tomato mixture, Parmesan cheese and a drizzle of balsamic vinegar.
