Ingredients
The following ingredients have 10 Servings
- 8 slices bacon (cut into ¼-inch slices)
- 1¼ pounds ground chuck
- 1 medium yellow onion (diced)
- 1 bell pepper (cored and diced)
- 48-52 ounces pork and beans (fat pieces discarded)
- ½ cup barbecue sauce
- ½ cup ketchup
- 2 tablespoons country mustard
- 2 tablespoons Worcestershire Sauce
- 2 tablespoons cider vinegar
- 2 tablespoons dark brown sugar
- Kosher salt & freshly ground black pepper (to taste)
Instruction
- Heat oven to 350°F and spray a 9x13-inch baking dish with nonstick spray.
- Cook the bacon (until soft but cooked througin a large saucepan. Transfer the bacon to a paper towel-lined plate and add the ground chuck to the pan with the bacon fat. Cook the beef until brown and drain, reserving 2 tablespoons rendered fat. Set the meat aside until ready to use.
- Add the onion and bell pepper to the rendered fat. Cook 3 minutes or until the vegetables have softened. Add the beans, barbecue sauce, ketchup, mustard, Worcestershire Sauce, cider vinegar and brown sugar; stir well. Taste and season with salt and black pepper; stir to incorporate.
- Pour the bean mixture into the prepared baking dish and sprinkle the bacon on top. Cover with aluminum foil and bake 30 minutes.
- Remove the foil and bake an additional 25-30 minutes or until thickened.
- Remove from the oven and let rest 10 minutes before serving.
