Ingredients
The following ingredients have 4 Servings
- 1/2 pound pumpkin (225 g)
- 2 red onions
- 1/2 yellow bell pepper
- 1/4 head of broccoli (discard the stem)
- 2 celery sticks
- 10 cherry tomatoes
- 4 cups boiling water (1 l)
- 4 tbsp soy sauce or tamari
- 1 tsp ginger powder
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp herbes de Provence
- 2 tbsp nutritional yeast
- Lemon juice to taste
Instruction
- Spiralize the pumpkin or chopped it finely with a knife. You can also use a peeler.
- Chop the rest of the veggies and place them with the pumpkin in a large pot. Add the water, soy sauce, spices (ginger, garlic and onion powder) and the herbs.
- Cook over medium-high heat for 5 to 10 minutes.
- When the soup is ready, add the nutritional yeast and the lemon juice just before serving, stir and enjoy!
