Ingredients
The following ingredients have 4 Servings
- 3 cups baby spinach leaves
- 4 oz shredded, cooked rotisserie chicken
- 1/4 cup halved cherry tomatoes
- 1/4 cup sliced baby cucumbers
- 1 1/2 cups mayonnaise , (we use mayo made with avocado oil)
- 1/4 cup fresh lemon juice
- 1 tbsp Dijon mustard
- 1 tsp Tabasco sauce
- 1 tsp soy sauce, (or coconut aminos for keto)
- 1/2 tsp coarse salt & freshly ground black pepper , (each)
- 1 cup shredded parmesan cheese
Instruction
- Mix together all ingredients except parmesan. Add parmesan and mix well. Store in a container in the fridge for use as needed.
- Assemble salad ingredients in a large bowl and top with 2 tablespoons of the dressing. Add additional seasoning if desired. Enjoy!
