Ingredients

The following ingredients have 4 Servings
  • 3 cups baby spinach leaves
  • 4 oz shredded, cooked rotisserie chicken
  • 1/4 cup halved cherry tomatoes
  • 1/4 cup sliced baby cucumbers
  • 1 1/2 cups mayonnaise , (we use mayo made with avocado oil)
  • 1/4 cup fresh lemon juice
  • 1 tbsp Dijon mustard
  • 1 tsp Tabasco sauce
  • 1 tsp soy sauce, (or coconut aminos for keto)
  • 1/2 tsp coarse salt & freshly ground black pepper , (each)
  • 1 cup shredded parmesan cheese

Instruction

  • Mix together all ingredients except parmesan. Add parmesan and mix well. Store in a container in the fridge for use as needed.
  • Assemble salad ingredients in a large bowl and top with 2 tablespoons of the dressing. Add additional seasoning if desired. Enjoy!
