- 1 1/4 pounds salmon fillet, skinless or 3 cans salmon drained and cleaned if desired
- 3 tblsp crumbs, panko or bread, and about 1 cup
- 1 green onion, diced
- 2 - 3 tblsp onion, minced
- 2 tblsp mayonaise
- 1 tsp Dijon mustard
- 1 tblsp lemon juice
- 2 tblsp parsley, dried
- 3/4 tsp salt
- 1/2 tsp pepper
- 1/2 - 1 cup vegetable oil
