  • 1 1/4 pounds salmon fillet, skinless or 3 cans salmon drained and cleaned if desired
  • 3 tblsp crumbs, panko or bread, and about 1 cup
  • 1 green onion, diced
  • 2 - 3 tblsp onion, minced
  • 2 tblsp mayonaise
  • 1 tsp Dijon mustard
  • 1 tblsp lemon juice
  • 2 tblsp parsley, dried
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1/2 - 1 cup vegetable oil
