Ingredients
The following ingredients have 4 Servings
- 6 chicken sausage (pre-cooked, cut into 1-inch slices)
- 4 red skin potatoes (1 inch cubes)
- 1 large onion (roughly chopped)
- 1 green pepper (chopped)
- 1 red pepper (chopped)
- 2 tablespoons olive oil
- 1 teaspoon dried parsley
- 1 teaspoon garlic powder
- salt and pepper to taste
- non-stick cooking spray or olive oil spray
Instruction
- Preheat oven to 375 F.
- Cover a shallow cookie sheet or jelly roll pan with aluminum foil and spray with non-stick cooking spray or olive oil spray.
- In a large bowl stir together the chicken sausage, vegetables, spices and two tablespoons of olive oil.
- Add chicken and vegetables to pan.
- Cook for 25-35 minutes or until potatoes are tender.
