Ingredients
The following ingredients have 2 Servings
- 1 French bread (make sure it has sesame seed)
- 2 tsp extra virgin olive oil
- 1 tsp parsley (dried)
- 3 tomatoes (on the vine, cut into pieces)
- 1/2 green bell pepper
- 2 tsp extra virgin olive oil
- 1/2 tsp salt (optional)
- 1 tsp ground black pepper
- 3 cloves garlic ((thinly sliced))
- 1 tsp oregano (dried )
- 1/4 cup red onions (bite sized pieces)
- 1/4 cup black olives
- 1/4 cup manzanilla olives
- 1 tsp balsamic vinegar ((optional))
- 1 tsp capers
- cilantro
Instruction
- Preheat oven to 450 degrees
- Cut bread into bite sized pieces and place them in a large bowl
- Add extra virgin olive oil and dried parsley to it, mix well
- Place the bread on a baking tray and put it in the oven.
- Toast the bread until it is light brown (about 7 minutes). Remove set aside
- Add tomatoes and bell pepper into the same bowl that had the bread
- Add extra virgin olive oil, salt, black pepper, garlic and dried oregano
- Place that mixture onto a baking tray and bake for about 15 minutes
- Add red onions, black olives and manzanilla olives to the same bowl
- Add the roasted veggies to the bowl along with all the roasting juices
- Add balsamic vinegar, bread and mix well
- Top with capers and cilantro
- Serve immediately
