Ingredients

The following ingredients have 2 Servings
  • 1 French bread (make sure it has sesame seed)
  • 2 tsp extra virgin olive oil
  • 1 tsp parsley (dried)
  • 3 tomatoes (on the vine, cut into pieces)
  • 1/2 green bell pepper
  • 2 tsp extra virgin olive oil
  • 1/2 tsp salt (optional)
  • 1 tsp ground black pepper
  • 3 cloves garlic ((thinly sliced))
  • 1 tsp oregano (dried )
  • 1/4 cup red onions (bite sized pieces)
  • 1/4 cup black olives
  • 1/4 cup manzanilla olives
  • 1 tsp balsamic vinegar ((optional))
  • 1 tsp capers
  • cilantro

Instruction

  • Preheat oven to 450 degrees
  • Cut bread into bite sized pieces and place them in a large bowl
  • Add extra virgin olive oil and dried parsley to it, mix well
  • Place the bread on a baking tray and put it in the oven.
  • Toast the bread until it is light brown (about 7 minutes). Remove set aside
  • Add tomatoes and bell pepper into the same bowl that had the bread
  • Add extra virgin olive oil, salt, black pepper, garlic and dried oregano
  • Place that mixture onto a baking tray and bake for about 15 minutes
  • Add red onions, black olives and manzanilla olives to the same bowl
  • Add the roasted veggies to the bowl along with all the roasting juices
  • Add balsamic vinegar, bread and mix well
  • Top with capers and cilantro
  • Serve immediately
