Ingredients

The following ingredients have 4 Servings
  • 1 red beet, (cooked, peeled, & diced)
  • 4 cups water
  • 1 avocado, (pitted & diced)
  • 2 cups pineapple, (chopped into bite-sized pieces)
  • 1 Tbsp fresh mint, (chopped)
  • 1 Tbsp fresh orange juice
  • 1 Tbsp maple syrup
  • ⅛ tsp ground cumin
  • ½ Tbsp extra virgin olive oil
  • 1 pinch salt

Instruction

  • Whisk together Orange Dressing ingredients in a bowl and set aside.
  • To prepare beet, add 4 cups of water to a pot. Add the beet and cook on medium heat for 40 minutes or until fork-tender. Drain water and let beet cool. Peel and cube.
  • Toss beet, pineapple, and avocado together with orange dressing. Sprinkle chopped mint on top and enjoy!
