Ingredients
The following ingredients have 4 Servings
- 1 red beet, (cooked, peeled, & diced)
- 4 cups water
- 1 avocado, (pitted & diced)
- 2 cups pineapple, (chopped into bite-sized pieces)
- 1 Tbsp fresh mint, (chopped)
- 1 Tbsp fresh orange juice
- 1 Tbsp maple syrup
- ⅛ tsp ground cumin
- ½ Tbsp extra virgin olive oil
- 1 pinch salt
Instruction
- Whisk together Orange Dressing ingredients in a bowl and set aside.
- To prepare beet, add 4 cups of water to a pot. Add the beet and cook on medium heat for 40 minutes or until fork-tender. Drain water and let beet cool. Peel and cube.
- Toss beet, pineapple, and avocado together with orange dressing. Sprinkle chopped mint on top and enjoy!
