Ingredients
The following ingredients have 4 Servings
- 1 bag Frozen shrimp - uncooked thawed and washed
- 1 tablespoon Olive oil
- 12 ounces Chorizo (one tube)
- 1 Jalapeno finely chopped
- 2 cloves Garlic finely chopped
- 1 Lime halved
- 1/4 head Lettuce finely chopped
- 2 Tomatoes finely chopped
- 1/4 cups Cilantro finely chopped
- 1 package Corn tortillas
- Radishes sliced
Instruction
- Place a large skillet over medium high heat. Add a tablespoon of olive oil. Add the garlic and the jalapeno. Cook until soft, not brown. Add the chorizo and cook until browned. Add the shrimp and cook until it changes color. Right before removing from the heat squeeze the juice from the lime. Cook for 30 seconds more. Remove from heat. While the shrimp is browning, chop the lettuce, tomato, and cilantro and place in separate dishes for serving. Heat tortillas on a griddle or large skillet over medium high heat. Heat both sides of each tortilla until soft and warm - about 30 seconds. Lay two tortillas on top of each other - leaving them on the griddle - place a generous spoonful of the warm shrimp on the tortillas and let warm for a few more seconds. Remove the taco from the griddle and serve immediately. Garnish with your choice of the chopped ingredients as well as hot sauce, salsa, lime juice and/or guacamole.
