Ingredients
The following ingredients have 4 Servings
- 1 lb shrimp (peeled and deveined)
- 1 cucumber (sliced)
- 1 tbsp. chili powder
- 1/2 tbsp. paprika
- 2 tsp. ground cumin
- 1/2 tsp. onion powder
- 1/2 tsp. garlic powder
- 1/2 tsp. dried oregano
- 2 tbsp. olive oil
- Cooking fat
- Sea salt and freshly ground black pepper;
- 1 ripe avocado (peeled, pitted, and diced)
- 1 tbsp. fresh cilantro (minced)
- 1 tbsp. fresh lime juice
- 1 garlic clove (minced)
- 1/4 cup Roma tomatoes (diced)
- 1/4 cup red onion (diced)
Instruction
- In a bowl, mash the avocado until smooth. Add all the remaining ingredients for the guacamole. Stir until well combined, cover, and refrigerate.
- Preheat the grill to medium-high heat.
- Place the shrimp in a bowl and toss with the olive oil, chili powder, paprika, cumin, onion powder, garlic powder, oregano, salt, and pepper.
- Grill the shrimp until cooked through, about 3 to 4 minutes per side.
- Top each cucumber slice with guacamole and shrimp.
- Serve topped with fresh cilantro.
