Ingredients

The following ingredients have 30 Servings
  • 1/2 cup pico de gallo salsa (drained)
  • 1/3 fresh pineapple (cut into small, 1/4 inch thick triangles)
  • 1 avocado cut into small (1/4 inch thick pieces)
  • 1 16 oz box Gorton’s Simply Bake Shrimp Classic Scampi
  • 2 boxes Athens mini fillo shells
  • Cilantro and lime to garnish

Instruction

  • Bake shrimp scampi according to package directions. Set aside to cool.
  • Fill each fillo cup with a teaspoon of pico de gallo, then place a small piece of pineapple, a small slice of avocado, and one shrimp on top.
  • Garnish each cup with cilantro and a squeeze of fresh lime. Serve immediately!
