Ingredients
The following ingredients have 6 Servings
- ~1 1/2 Tbsp e.v. olive oil
- 1 cup onion, diced
- 3/4 lb ground chorizo, casings removed if needed
- 1 Tbsp ground paprika
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- 1 1/4 tsp salt
- 1 Tbsp garlic, minced
- 2 bay leaves
- 15 ounces canned diced tomatoes w/ juices
- 4 cups water or broth
- 1 lb potatoes, peeled & diced
- 1 1/2 cup frozen corn
- 1 1/4 lb shrimp, peeled & deveined
- 1 small bunch kale, chopped
- 1/4 cup parsley, chopped - as garnish
Instruction
- Bring a large pot to medium high heat and add olive oil to lightly coat the pan. Add onions, chorizo, paprika, thyme, oregano, and sea salt. Cook for ~ 6-8 minutes or until sausage is done.
- Add the garlic and cook 1-2 minutes or until fragrant.
- Add the bay leaves, tomatoes, water/broth, and potatoes. Bring to a boil, reduce heat and simmer covered ~ 12 minutes or until potatoes are tender with a fork.
- Add corn and shrimp and more water/broth until desired consistency. Cook an additional 3-5 minutes until shrimp are pink and done. Fold in the kale and cook until wilted (~2 minutes).
- Add sea salt to taste and spice it up with chili pepper flakes if you like.
