Ingredients
The following ingredients have 4 Servings
- 10oz (300gr) shrimp (prawns), cleaned
- 8 green garlic (or green onion), sliced, including green
- 2 tbs olive oil
- 1 tbs butter
- 8oz (250gr) fresh gnocchi
- 3 tbs pesto
- 3 tbs fresh, chopped chives
Instruction
- Cook gnocchi in boiling water just until it floats, 1 – 2 minutes.
- Drain and immediately put in a hot skillet, big enough to hold it all in a single layer.
- Add 1 tbs olive and toss to coat. Fry over medium heat, tossing frequently, until lightly browned, 6 – 8 minutes
- Sauté green garlic and shrimp in remaining 1 tbs olive oil and butter in another skillet until tender, 6 – 8 minutes.
- Remove from heat.
- When gnocchi is ready remove from heat and combine with shrimp / green garlic in the larger skillet.
- Add pesto, chives and stir to combine. Serve.
