  • ½ smal carrot ((cut into thin slices cross-wise))
  • Cilantro (for garnishing)
  • Ponzu (sauce to serve)
  • 8 oz shrimp ((roughly chopped) (225g))
  • 4 shitake mushrooms ((diced))
  • 1 tbsp soy sauce
  • 1 tbsp Shao Hsing cooking wine
  • 1/8 tsp ground pepper
  • 1 tsp sesame oil
  • 1 green onion ((finely sliced))
  • ¾ cup wheat starch ((3.5 oz/ 100g))
  • ¼ cup tapioca starch ((1 oz/30g))
  • ¾ cup water ((180ml))
  • 1 tsp vegetable oil
