Ingredients

The following ingredients have 4 Servings
  • 1 lb. medium shrimp (raw)
  • 7 limes (juiced)
  • 1 jalapeno (deseeded & diced)
  • 4 Roma tomatoes (chopped & juice removed)
  • 2 cucumbers (peeled, deseeded, & diced)
  • 1 avocado (diced)
  • 1 bunch cilantro (stems removed & chopped)
  • 1/2 sweet yellow onion (diced)
  • Salt to taste

Instruction

  • In a large bowl add the lime juice, jalapeno and onions.   
  • Cook shrimp in 2 tbsp. water. Cut each shrimp into thirds.
  • Add all remaining ingredients including shrimp to lime juice, jalapeno and onions. Salt to taste.
  • Refrigerate one hour, up to overnight for best flavor. Serve with tortilla chips, over a tostada, or with any of your favorite Mexican dishes.
