Ingredients
The following ingredients have 4 Servings
- 1 lb. medium shrimp (raw)
- 7 limes (juiced)
- 1 jalapeno (deseeded & diced)
- 4 Roma tomatoes (chopped & juice removed)
- 2 cucumbers (peeled, deseeded, & diced)
- 1 avocado (diced)
- 1 bunch cilantro (stems removed & chopped)
- 1/2 sweet yellow onion (diced)
- Salt to taste
Instruction
- In a large bowl add the lime juice, jalapeno and onions.
- Cook shrimp in 2 tbsp. water. Cut each shrimp into thirds.
- Add all remaining ingredients including shrimp to lime juice, jalapeno and onions. Salt to taste.
- Refrigerate one hour, up to overnight for best flavor. Serve with tortilla chips, over a tostada, or with any of your favorite Mexican dishes.
