Ingredients
The following ingredients have 4 Servings
- Salad
- 2 c. chopped romaine lettuce
- 2 tbsp. shredded Parmesan Reggiano cheese
- 1½ lbs. medium shrimp (cooked and peeled)
- ¾ c. grape or cherry tomatoes (halved)
- ¾ c. whole wheat seasoned croutons
- Dressing
- 3 tbsp. Greek yogurt
- 2 tbsp. fresh lemon juice
- 1 tsp. grated Parmesan Reggiano cheese
- ¼ tsp. black pepper
- ½ tbsp. minced garlic
- ½ tsp. apple cider vinegar
Instruction
- Combine all of the dressing ingredients in a bowl and stir with a whisk. Chill until ready to use for salad.
- For salad, combine all ingredients in a large bowl. Toss lightly to mix. Cover salad with dressing and toss well to coat. Serve immediately.
