Ingredients

The following ingredients have 4 Servings
  • Salad
  • 2 c. chopped romaine lettuce
  • 2 tbsp. shredded Parmesan Reggiano cheese
  • 1½ lbs. medium shrimp (cooked and peeled)
  • ¾ c. grape or cherry tomatoes (halved)
  • ¾ c. whole wheat seasoned croutons
  • Dressing
  • 3 tbsp. Greek yogurt
  • 2 tbsp. fresh lemon juice
  • 1 tsp. grated Parmesan Reggiano cheese
  • ¼ tsp. black pepper
  • ½ tbsp. minced garlic
  • ½ tsp. apple cider vinegar

Instruction

  • Combine all of the dressing ingredients in a bowl and stir with a whisk. Chill until ready to use for salad. 
  • For salad, combine all ingredients in a large bowl. Toss lightly to mix. Cover salad with dressing and toss well to coat. Serve immediately.
