Ingredients

The following ingredients have 4 Servings
  • 3 ounces frozen shrimp
  • 2 eggs
  • 1/2 cup steamed broccoli (chopped )
  • avocado (sour cream, salsa for topping)

Instruction

  • Heat shrimp in a nonstick pan shrimp until defrosted (drain liquid half way through) and lightly seared
  • Remove from pan and set aside, set the pan on medium heat. 
  • Add two large eggs to the, using a rubber spatula break yolk up and let mixture spread flat across the pan.  
  • Add shrimp and broccoli to the thin egg layer.  
  • Once eggs are completely set, enjoy your omelet!
