The following ingredients have 4 Servings
- 3 ounces frozen shrimp
- 2 eggs
- 1/2 cup steamed broccoli (chopped )
- avocado (sour cream, salsa for topping)
Instruction
- Heat shrimp in a nonstick pan shrimp until defrosted (drain liquid half way through) and lightly seared
- Remove from pan and set aside, set the pan on medium heat.
- Add two large eggs to the, using a rubber spatula break yolk up and let mixture spread flat across the pan.
- Add shrimp and broccoli to the thin egg layer.
- Once eggs are completely set, enjoy your omelet!
