Ingredients

The following ingredients have 4 Servings
  • 1 pound penne pasta (or pasta of choice)
  • 2 Tbsps olive oil
  • 1 pound jumbo shrimp (peeled and deveined)
  • kosher salt, pepper, crushed red pepper flakes
  • 1 pound smoked sausage (cut into 1/2 inch slices)
  • 1 pound asparagus (cut into inch pieces)
  • 1 onion (diced)
  • 1 Tbsp garlic paste or minced garlic
  • 6 oz sun dried tomatoes (sliced)
  • 8 oz pesto
  • 8 oz shredded mozzarella cheese

Instruction

  • Boil the pasta according to package directions. Drain the pasta and set aside.
  • Set the same pot that you boiled the paste in over medium heat. Add 1 Tbsp of the olive oil, shrimp, kosher salt, pepper, and crushed red pepper flakes. Cook 2 to 3 minutes, stirring occasionally. Remove the shrimp and set aside.
  • Add the sliced sausage to the pot, cook 2 to 3 minutes stirring occasionally and set side.Note: Smoked sausage is already cooked, just trying to brown and crisp the edges a bit.
  • Add the remaining 1 Tbsp olive oil, asparagus, diced onion, and garlic and more kosher salt, pepper, and crushed red pepper flakes. Cook 4 to 5 minutes, stirring occasionally.
  • Add the shrimp, sausage, and cooked pasta back into the pot along with the sun dried tomatoes, pesto, and mozzarella cheese. Stir until evenly mixed.
  • Taste for seasoning and add more kosher salt, pepper, or crushed red pepper flakes if needed.
