Ingredients

The following ingredients have 2 Servings
  • 3 links chicken sausage (no sugar added, sliced)
  • 1 cup white sweet potato (peeled and diced)
  • 1 cup Brussels sprouts (sliced)
  • 1 cup butternut squash (sliced)
  • 1/2 cup green bell pepper (sliced)
  • 1/2 cup red bell pepper (sliced)
  • 1 cup red onion (sliced)
  • 2 cloves garlic (minced)
  • 1 tbsp rosemary
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • 1 tsp basil
  • salt and pepper to taste

Instruction

  • Preheat oven to 425 F. Prepare a large baking sheet.
  • Place the veggies and chicken sausage in a large mixing bowl. Spray with avocado oil spray (note these sprays are not calorie free). Add the garlic, seasonings, salt and pepper to the bowl and mix together. Spread everything onto the baking sheet.
  • Bake 25 minutes or until veggies are fully cooked.
  • Remove from the oven and serve immediately. Store the leftovers in the refrigerator up to 5 days.
