Ingredients

The following ingredients have 4 Servings
  • 1 pound pre-cooked sausage (we like Aidells smoked chicken sausage but any pre cooked sausage will do)
  • 1/2 pound brussels sprouts, halved
  • 1 small sweet potato, peeled and cubed
  • 1 small purple onion, chopped
  • 1 red pepper, seeded and chopped
  • 1 yellow pepper, seeded and chopped
  • 1/4 cup olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon italian seasoning (or 1/2 teaspoon oregano and 1/2 teaspoon basil)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instruction

  • Preheat oven to 400 degrees. Line large baking sheet with foil for easy clean up.
  • Spread sausage and veggies out onto prepared sheet pan.
  • Combine olive oil, seasoning, salt and pepper.  Pour over sausage and veggies and toss.
  • Bake for 30 minutes or until brussels and sweet potatoes are tender.
  • Serve with rice or quinoa.
