Ingredients
The following ingredients have 4 Servings
- 1 pound pre-cooked sausage (we like Aidells smoked chicken sausage but any pre cooked sausage will do)
- 1/2 pound brussels sprouts, halved
- 1 small sweet potato, peeled and cubed
- 1 small purple onion, chopped
- 1 red pepper, seeded and chopped
- 1 yellow pepper, seeded and chopped
- 1/4 cup olive oil
- 3 garlic cloves, minced
- 1 teaspoon italian seasoning (or 1/2 teaspoon oregano and 1/2 teaspoon basil)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instruction
- Preheat oven to 400 degrees. Line large baking sheet with foil for easy clean up.
- Spread sausage and veggies out onto prepared sheet pan.
- Combine olive oil, seasoning, salt and pepper. Pour over sausage and veggies and toss.
- Bake for 30 minutes or until brussels and sweet potatoes are tender.
- Serve with rice or quinoa.
