Ingredients
The following ingredients have 3 Servings
- 8 oz chicken breasts (thawed)
- 6 tbsp Paleo Zucchini Hummus (divided)
- 2 sweet potatoes (or yams, spiralized (~2 cups))
- salt and pepper to taste
- lemons for garnish
Instruction
- Preheat oven to 350 F. Prepare a medium baking sheet with parchment paper or nonstick cooking spray. Set aside.
- Place the chicken breasts horizontally on the baking sheet leaving room in between
- Place 2 tablespoons of hummus on top of each chicken breast and spread into an even layer.
- Arrange the spiralized sweet potato around the chicken breasts. Alternatively, you can dice the sweet potato into small quarter size pieces to cook at the same temperature for the same amount of time.
- Salt & pepper the sweet potato and chicken breasts to taste.
- Bake at 350 for 20 minutes.
- Remove from the oven, serve immediately with lemon.
