Ingredients
The following ingredients have 4 Servings
- 3 tablespoons olive oil
- 1- pound brussels sprouts (, trimmed)
- 1 large red onion (, thinly sliced)
- salt and fresh ground pepper (, to taste)
- 1 teaspoon sugar
- 1/2 cup pistachios (, cleaned, peeled, and coarsely chopped)
- 1 lime (, juiced)
- 1 avocado (, peeled and cubed)
Instruction
- Heat olive oil in a nonstick pan and over medium heat.
- Cut brussels sprouts in half and thinly slice; they will look shredded.
- Add brussels sprouts and onion to the pan.
- Season with salt and pepper; saute for 3 to 4 minutes, or until tender.
- Stir in sugar, pistachios, and lime juice.
- Continue to cook for 2 more minutes.
- Remove from heat.
- Gently mix in avocado chunks.
- Serve immediately.
