  • 2 tsp corn starch
  • 1½ lbs chicken thighs (boneless, skinless, cut into bite-sized pieces)
  • 2 egg yolks
  • 1 tsp soy sauce
  • 1 tsp Chinese cooking wine (Shaoxing)
  • ½ tsp salt
  • ½ tsp black pepper
  • ⅓ cup corn starch
  • ⅓ cup all-purpose flour
  • peanut oil (for frying, about 4 cups)
  • 3 tbsp peanut oil
  • 1 tsp garlic (minced)
  • 1 tsp ginger (fresh, chopped)
  • 2 tbsp sesame seeds
  • 4 scallions (chopped)
  • Steamed rice
