Ingredients
The following ingredients have 4 Servings
- 1 lb turkey breasts
- 2 red Bell pepper (400 grams)
- 2 onions
- 2 garlic cloves
- 2 Tbsps Canola oil
- salt
- peppers
- 1 tsp ground paprika (sweet)
- 1 tsp ground paprika (hot)
- 7 ozs Long grain rice
- 2 Tbsps Tomato paste
- 1.25 pints Chicken broth
- 14 ozs Diced tomatoes (canned)
Instruction
- Rinse turkey breast, pat dry and cut into 2 cm (approximately 3/4 inch) cubes.
- Cut bell peppers into quarters, remove the seeds, rinse and dice. Peel the onions and chop finely. Peel the garlic and chop finely.
- Heat oil in a heavy pot and brown the meat over high heat. Season with salt and pepper.
- Add the onions, garlic and bell peppers to the pot and cook 1 more minute.
- Sprinkle with paprika.
- Add rice and stir in the tomato paste.
- Add broth and diced tomatoes and bring to a boil. Cover and cook over medium heat, stirring frequently for 20 minutes. Season meat with salt and pepper and serve immediately.
