Ingredients

The following ingredients have 4 Servings
  • 1 lb turkey breasts
  • 2 red Bell pepper (400 grams)
  • 2 onions
  • 2 garlic cloves
  • 2 Tbsps Canola oil
  • salt
  • peppers
  • 1 tsp ground paprika (sweet)
  • 1 tsp ground paprika (hot)
  • 7 ozs Long grain rice
  • 2 Tbsps Tomato paste
  • 1.25 pints Chicken broth
  • 14 ozs Diced tomatoes (canned)

Instruction

  • Rinse turkey breast, pat dry and cut into 2 cm (approximately 3/4 inch) cubes.
  • Cut bell peppers into quarters, remove the seeds, rinse and dice. Peel the onions and chop finely. Peel the garlic and chop finely.
  • Heat oil in a heavy pot and brown the meat over high heat. Season with salt and pepper.
  • Add the onions, garlic and bell peppers to the pot and cook 1 more minute.
  • Sprinkle with paprika.
  • Add rice and stir in the tomato paste.
  • Add broth and diced tomatoes and bring to a boil. Cover and cook over medium heat, stirring frequently for 20 minutes. Season meat with salt and pepper and serve immediately.
