Ingredients

The following ingredients have 4 Servings
  • 1 can(s) yellow or white hominy, drained (15 oz)
  • 1 can(s) mexican-style diced tomatoes (14.5 oz)
  • 1 can(s) geen enchilada sauce-mild (10 oz)
  • 2 stick(s) carrots, diced
  • 1 medium onion, chopped
  • 3 clove(s) garlic, minced
  • 2 teaspoon(s) cumin
  • 1 1/2 pound(s) chicken, skinless-boneless, cubed
  • 1 bunch(es) cilantro (optional)
  • 2 medium lime wedges (optional)
  • 1 large tortilla chips bag or homemade (optional)

Instruction

  • Combine hominy, tomatoes, enchilada sauce, carrots, onion, garlic and cumin in slow cooker.
  • Add chicken and stir to combine. cover and cook on low 3 to 3 1/2 hours until chicken is cooked through and vegetables are tender.
  • Stir in cilantro if you desire to use it. You may serve with lime wedges and tortilla chips.
