Ingredients
The following ingredients have 4 Servings
- 1 can(s) yellow or white hominy, drained (15 oz)
- 1 can(s) mexican-style diced tomatoes (14.5 oz)
- 1 can(s) geen enchilada sauce-mild (10 oz)
- 2 stick(s) carrots, diced
- 1 medium onion, chopped
- 3 clove(s) garlic, minced
- 2 teaspoon(s) cumin
- 1 1/2 pound(s) chicken, skinless-boneless, cubed
- 1 bunch(es) cilantro (optional)
- 2 medium lime wedges (optional)
- 1 large tortilla chips bag or homemade (optional)
Instruction
- Combine hominy, tomatoes, enchilada sauce, carrots, onion, garlic and cumin in slow cooker.
- Add chicken and stir to combine. cover and cook on low 3 to 3 1/2 hours until chicken is cooked through and vegetables are tender.
- Stir in cilantro if you desire to use it. You may serve with lime wedges and tortilla chips.
