  • 2 garlic cloves, (crushed )
  • 2 Tbsp brown sugar
  • 1/4 cup extra virgin olive oil
  • kosher salt and pepper
  • 2 Tbsp whole coriander
  • 1 1/2 Tbsp whole black peppercorns
  • 12 oz Ahi tuna steaks ((6-7 oz each))
  • 1 cup roasted or grilled corn kernels ((from 2 ears corn, roasted or grilled and kernels cut off))
  • 2 Tbsp cilantro, (chopped)
  • 2 Tbsp scallions ((white and pale green parts only), sliced)
  • 1 lime, (juiced and zested)
  • 1 Tbsp extra virgin olive oil
  • kosher salt and pepper
