- 2 cloves garlic, (minced)
- 1 cup arborio rice
- 1/2 cup dry white wine
- 2 Tbsp unsalted butter
- 2 tsp fresh thyme, (minced)
- 1/4 cup parmesan cheese, (grated)
- kosher salt
- 16 sea scallops, (patted dry)
- kosher salt and freshly ground black pepper ((for seasoning))
- 2 Tbsp canola or vegetable oil
- 4 oz unsalted butter ((1 stick))
- 1 clove garlic, peeled and smashed
- 6 sprigs fresh thyme
- *shaved parmesan and fresh thyme for serving
