- 8 oz scallops (bay or sea (if sea, cut into quarters))
- 2 cloves garlic (minced)
- 1 jalapeno (seeded and finely chopped)
- 1 tbsp all-purpose flour
- ¼ tsp cayenne pepper
- ¾ cup half and half
- ¼ cup cheese (shredded, Chihuahua, Oaxaca, or Monterey Jack)
- 2 tbsp cilantro (fresh, chopped, for garnish)
