  • 8 oz scallops (bay or sea (if sea, cut into quarters))
  • 2 cloves garlic (minced)
  • 1 jalapeno (seeded and finely chopped)
  • 1 tbsp all-purpose flour
  • ¼ tsp cayenne pepper
  • ¾ cup half and half
  • ¼ cup cheese (shredded, Chihuahua, Oaxaca, or Monterey Jack)
  • 2 tbsp cilantro (fresh, chopped, for garnish)
