Ingredients
The following ingredients have 4 Servings
- 6 specialty English muffins (sliced in half, toasted with butter)
- 12 eggs (scrambled)
- Salt and pepper to taste
- 1/2 cup cook bacon bits
- 1 red pear
- 2 blood oranges
- 3-5 mini eclairs (buy at your favorite bakery)
- 1 cup tomatoes (chunks or halves)
- 1/2 cup blueberry jam
- 1/2 cup apricot jam
- Edible flowers for garnish
Instruction
- On a prepared board, make a place where the eggs will be served (USE A HOT PAD). While the eggs are cooking (and bacon), start building the board.
- Toast the English muffins and add butter. Serve warm after the board is built.
- Scramble the eggs. TIP: Add eggs to a blender and add 1/4 cup water. Blend. Pour in a pan, salt, and cook on low heat. Undercook, if possible.
- Bake the bacon in the oven (DIRECTIONS OR LINK) and chop to serve on the side. Also chop the tomatoes.
- Add the pastries to the board with fresh fruit.
- Garnish with fresh edible flowers (always optional), and serve!
