Ingredients

The following ingredients have 4 Servings
  • 6 specialty English muffins (sliced in half, toasted with butter)
  • 12 eggs (scrambled)
  • Salt and pepper to taste
  • 1/2 cup cook bacon bits
  • 1 red pear
  • 2 blood oranges
  • 3-5 mini eclairs (buy at your favorite bakery)
  • 1 cup tomatoes (chunks or halves)
  • 1/2 cup blueberry jam
  • 1/2 cup apricot jam
  • Edible flowers for garnish

Instruction

  • On a prepared board, make a place where the eggs will be served (USE A HOT PAD). While the eggs are cooking (and bacon), start building the board.
  • Toast the English muffins and add butter. Serve warm after the board is built.
  • Scramble the eggs. TIP: Add eggs to a blender and add 1/4 cup water. Blend. Pour in a pan, salt, and cook on low heat. Undercook, if possible.
  • Bake the bacon in the oven (DIRECTIONS OR LINK) and chop to serve on the side. Also chop the tomatoes.
  • Add the pastries to the board with fresh fruit.
  • Garnish with fresh edible flowers (always optional), and serve!
