Ingredients

The following ingredients have 4 Servings
  • 2 tablespoons olive oil
  • 2 teaspoon minced garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 medium zucchini ((cut in 1/3 inch thick rounds and then halved to make semi-circles))
  • 3 tablespoons coarsely chopped walnuts
  • 1/4 cup Parmesan cheese

Instruction

  • Heat olive oil in skillet over medium high heat.
  • Add garlic and saute for a minute.
  • Add zucchini pieces and let them cook for about 3 minutes, until they start to soften and the edges turn brown.
  • Turn over and brown the other side, about 2-3 more minutes.
  • Remove the zucchini from the skillet when it is softened but before it becomes mushy.
  • Sprinkle with chopped walnuts and Parmesan cheese, and serve.
