Ingredients
The following ingredients have 4 Servings
- 2 tablespoons olive oil
- 2 teaspoon minced garlic
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 medium zucchini ((cut in 1/3 inch thick rounds and then halved to make semi-circles))
- 3 tablespoons coarsely chopped walnuts
- 1/4 cup Parmesan cheese
Instruction
- Heat olive oil in skillet over medium high heat.
- Add garlic and saute for a minute.
- Add zucchini pieces and let them cook for about 3 minutes, until they start to soften and the edges turn brown.
- Turn over and brown the other side, about 2-3 more minutes.
- Remove the zucchini from the skillet when it is softened but before it becomes mushy.
- Sprinkle with chopped walnuts and Parmesan cheese, and serve.
