Ingredients
The following ingredients have 4 Servings
- 1 tbsp . olive oil
- 1 tbsp . butter
- 1/2 onion (, thinly sliced)
- 2 cups sliced mushrooms
- 2 cloves grated/minced garlic
- 4 pieces crumbled cooked bacon
- 2 bags of baby spinach (, cleaned)
- Salt and Pepper
- Squeeze of fresh lemon
- 1/2 tsp Sriracha ((optional))
Instruction
- Heat a sauté pan, add oil and butter, sauté the onions, once softened, about 5 minutes, add mushrooms and cook for about 3 minutes more.
- Add the Sriracha if using.
- Add in the garlic.
- Lower heat to low, add in spinach and the bacon, mix well.
- Salt, pepper, and a squeeze of juice from 1/4 a lemon.
- Remove from heat and serve.
