Ingredients
The following ingredients have 2 Servings
- 1 baked sweet potato
- 2 sausage links (paleo approved if necessary, sliced)
- 1 cup greens (spinach, kale or mustard greens)
- olive oil
Instruction
- Heat 1 tbsp oil over medium high heat.
- Saute sausage for about 5 minutes or until you get some browning on each side.
- Add spinach and stir for a minute or two until spinach begins to wilt.
- Cut slits in sweet potatoes and fill with sausage and spinach.
- Salt and pepper to taste.
