Ingredients

The following ingredients have 2 Servings
  • 1 baked sweet potato
  • 2 sausage links (paleo approved if necessary, sliced)
  • 1 cup greens (spinach, kale or mustard greens)
  • olive oil

Instruction

  • Heat 1 tbsp oil over medium high heat.
  • Saute sausage for about 5 minutes or until you get some browning on each side.
  • Add spinach and stir for a minute or two until spinach begins to wilt.
  • Cut slits in sweet potatoes and fill with sausage and spinach.
  • Salt and pepper to taste.
