Ingredients
The following ingredients have 4 Servings
- 1 lb sausage (hot (or combo of mild and hot), removed from casings)
- 1 sweet onion (diced)
- 3 carrots (diced)
- 2 celery stalks (diced)
- 2 cloves garlic (minced)
- 1 can diced tomato (14.5 oz)
- 8 oz tomato sauce
- 1/2 C sherry
- 6 C vegetable stock
- 8 oz egg noodles
Instruction
- In a large pot over medium/high heat add the sausage. Break up sausage pieces and cook until browned.
- Add the onion, carrot and celery. Cook just until onion begins to soften 2-3 minutes. Add garlic and allow to cook 1 more minute.
- Add sherry and let it cook down for 2 minutes.
- Add tomatoes, tomato sauce and vegetable stock. Bring to a boil. Add noodles and turn heat down to medium. Cook until noodles are tender, about 10 minutes. Serve while hot.
