Ingredients
The following ingredients have 4 Servings
- 1 tbs rice bran oil
- 3 beef sausages small
- 1/4 red capsicum chopped
- 1/4 red onion chopped
- 1/2 tsp hot smoked paprika
- 1/2 tsp ground cumin
- 1/2 tsp white pepper ground
- 1 cup canned crushed tomatoes
- 1/4 cup water
- 1/2 cup spinach leaves only
- 2 eggs
- 1/4 cup fresh coriander chopped
Instruction
- Heat oil in a small skillet and cook sausages over a medium heat setting. Remove and set aside.
- Increase temp to medium-high and saute capsicum and onion while stirring, until they begin to caramelise slightly.
- Stir through paprika, cumin and pepper and continue to saute for a few more minutes until fragrant
- Add tomatoes and water and bring to simmer while stirring.
- Stir through spinach leaves.
- Add the cooked sausages to the skillet, off to one side, then crack the eggs carefully on the other side
- Pop a lid on and cook until eggs are done to your liking.
- Top with coriander and serve.
