Ingredients

The following ingredients have 4 Servings
  • 1 tbs rice bran oil
  • 3 beef sausages small
  • 1/4 red capsicum chopped
  • 1/4 red onion chopped
  • 1/2 tsp hot smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp white pepper ground
  • 1 cup canned crushed tomatoes
  • 1/4 cup water
  • 1/2 cup spinach leaves only
  • 2 eggs
  • 1/4 cup fresh coriander chopped

Instruction

  • Heat oil in a small skillet and cook sausages over a medium heat setting. Remove and set aside.
  • Increase temp to medium-high and saute capsicum and onion while stirring, until they begin to caramelise slightly.
  • Stir through paprika, cumin and pepper and continue to saute for a few more minutes until fragrant
  • Add tomatoes and water and bring to simmer while stirring.
  • Stir through spinach leaves.
  • Add the cooked sausages to the skillet, off to one side, then crack the eggs carefully on the other side
  • Pop a lid on and cook until eggs are done to your liking.
  • Top with coriander and serve.
