Ingredients

The following ingredients have 4 Servings
  • 12 Sausages
  • 2 onions (finely diced)
  • 2 tbsp balsamic vinegar
  • 2 tbsp tomato puree
  • 800 g tinned tomatoes
  • 300 ml stock (I used beef stock)
  • 40 g wild garlic (diced)

Instruction

  • Cook the sausages in a large saucepan. Keep turning them until they are browned on all sides. It'll take about 8 minutes.
  • Remove the sausages from the pan and set aside. Pour away any excess oil just leaving a little to cook the onions.
  • Cook the onions gently over a low heat for about 5 minutes.
  • Add the balsamic vinegar and stir. Cook for a couple of minutes.
  • Add the tinned tomatoes, tomato puree, stock and about three quarters of the wild garlic.
  • Bring to the boil then add the sausages and lower to a simmer. Simmer for 20 minutes.
  • Scatter the rest of the wild garlic over the stew just before serving.
