Ingredients

The following ingredients have 4 Servings
  • Ingredients for the wings:
  • 18 chicken wings
  • 3 Tablespoon soy sauce
  • 1 Tablespoon minced garlic
  • 2 teaspoon sugar
  • 2 teaspoon rice wine
  • 1 teaspoon sesame oil
  • 2 egg yolks
  • Other ingredients:
  • 1/2 cup tapioca starch
  • Thinly sliced red chili pepper or jalapeno (optional)
  • 2 Tablespoon thinly sliced green onion
  • Salt to taste
  • White pepper powder to taste
  • Chopped cilantro for garnish

Instruction

  • In a Ziploc bag, marinate the wings with all the other wing ingredients combined for at least 30 minutes in the refrigerator.
  • Add the tapioca starch into the bag and shake. Let the bag sit at room temperature. When you see the tapioca starch appears to be moist (no longer white), put them in the fryer basket. Air fry at 380F (190C) for 20-22 minutes, turn the wings twice in between. During the second turn, put in the hot chili peppers and continue to air fry until the wings exceed 165F (74C) and the skin is crispy.
  • Place the wings in a large mixing bowl and toss with the salt, pepper, green onion and cilantro. Serve the wings while still hot.
