Ingredients

The following ingredients have 4 Servings
  • 1 Tablespoon olive oil
  • 1 Pound boneless chicken tenders
  • 1 Cup salsa
  • 15 Ounce black beans (canned, rinsed & drained)
  • 3/4 Cup shredded cheese (monterey jack or mexican blend)
  • 2 Tablespoon chopped cilantro

Instruction

  • Heat olive oil in a large skillet, over medium/high heat.  Add chicken tenders.  Brown each side, about 4 minutes per side, turning with tongs.
  • Pour salsa over chicken and also black beans. Cook until chicken is cooked thru, about 4 more minutes. 
  • Sprinkle cheese over chicken and continue to cook, just until cheese is melted.  Remove from heat and top with chopped cilantro.
  • Serve with prepared rice if desired.
