Ingredients

The following ingredients have 2 Servings
  • 2 cups baby spinach leaves
  • 8 ounces cooked salmon
  • 2 mandarin oranges (peeled and divided into segments)
  • 1/2 cup fresh blackberries
  • 1/4 cup sliced scallions
  • 1/4 cup pumpkin seeds
  • juice of one lime
  • 1 tbsp sesame oil
  • 1 tbsp liquid honey

Instruction

  • Divide spinach between two plates
  • Arrange salmon, orange segments and blackberries, scallions, and pumpkin seeds over the spinach on each plate
  • Whisk together lime juice, sesame oil, and honey, and drizzle over each salad.
