Ingredients

The following ingredients have 4 Servings
  • 1 pound pasta of choice (I used rigatoni)
  • 4 Tbsps butter
  • 1 pint heavy cream
  • 4 oz pesto
  • 1 1/2 cups shredded parmesan cheese
  • kosher salt, pepper
  • 8 oz smoked salmon
  • 3 oz capers
  • Optional: basil for garnish

Instruction

  • Cook the pasta in boiling, salted water according to the package directions. Drain and rinse with cold water while you make the pesto cream sauce.
  • Set the same pot that you boiled the pasta in over medium heat. Add the butter and once melted add the cream, bring to a boil and reduce the heat to simmer for 7 minutes.
  • Add the pesto, parmesan cheese and stir until melted. Shred the salmon or break into smaller pieces, add the salmon, capers, cooked pasta, kosher salt, and pepper. Stir until evenly combined.
  • Serve with basil as garnish if desired.
