Ingredients

  • 1 tbsp miso paste
  • 1 tbsp root ginger (grated)
  • 1 clove garlic (crushed)
  • 150 g salmon
  • 50 g mushrooms (sliced)
  • 25 g spinach
  • 80 g soba noodles
  • 2 tsp sesame oil

Instruction

  • Put 600ml water from the kettle into a saucepan.   Add the miso, ginger and garlic and bring back to the boil.
  • Lower the salmon gently into the water and simmer until the salmon is just cooked and begins to flake when you touch it with a fork. It'll take about 5 minutes.
  • At the same time cook the soba noodles according to the pack instructions.  They'll take about 5 minutes. When they are ready, drain them, toss them with a little sesame oil and put them in the bottom of the soup bowls.
  • Lift the salmon out of the water and divide it between each bowl.
  • Add the mushrooms and spinach to the pan.  Cover the pan and cook for a couple of minutes. Ladle some of the soup and vegetables into each bowl.
