Ingredients

The following ingredients have 4 Servings
  • 4 salmon fillets, ((about 3 ounces each))
  • extra virgin olive oil
  • 2 cloves garlic, (minced, divided)
  • salt and fresh ground pepper (to taste)
  • 6 cups torn romaine lettuce
  • 4 cups baby spinach
  • 2 large hard-boiled eggs, (quartered)
  • 4 slices turkey bacon, (cooked to a desired crispness and crumbled)
  • 2 cups cherry tomatoes, (halved)
  • ½ cup crumbled feta cheese
  • 1 avocado (, cut in slices)
  • 1 lemon (, cut in slices)
  • ¼ cup Extra Virgin Olive Oil
  • 2 tablespoons Red Wine Vinegar
  • 1 tablespoon lemon juice, (or to taste)
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon dijon mustard
  • 1 clove garlic, (minced)
  • salt and fresh ground pepper, (to taste)

Instruction

  • Preheat oven to 425˚F.
  • Line a baking sheet with foil.
  • Drizzle some oil over the top of each salmon, just enough to coat the salmon.
  • Sprinkle the salmon with salt and pepper, and top each fillet with a bit of minced garlic.
  • Place salmon fillets on the baking sheet and transfer to the oven.
  • Roast for 15 to 18 minutes, or until salmon flakes easily with a fork.
  • Remove from oven and set aside.
