Ingredients
The following ingredients have 4 Servings
- 4 salmon fillets, ((about 3 ounces each))
- extra virgin olive oil
- 2 cloves garlic, (minced, divided)
- salt and fresh ground pepper (to taste)
- 6 cups torn romaine lettuce
- 4 cups baby spinach
- 2 large hard-boiled eggs, (quartered)
- 4 slices turkey bacon, (cooked to a desired crispness and crumbled)
- 2 cups cherry tomatoes, (halved)
- ½ cup crumbled feta cheese
- 1 avocado (, cut in slices)
- 1 lemon (, cut in slices)
- ¼ cup Extra Virgin Olive Oil
- 2 tablespoons Red Wine Vinegar
- 1 tablespoon lemon juice, (or to taste)
- 1 teaspoon worcestershire sauce
- 1 teaspoon dijon mustard
- 1 clove garlic, (minced)
- salt and fresh ground pepper, (to taste)
Instruction
- Preheat oven to 425˚F.
- Line a baking sheet with foil.
- Drizzle some oil over the top of each salmon, just enough to coat the salmon.
- Sprinkle the salmon with salt and pepper, and top each fillet with a bit of minced garlic.
- Place salmon fillets on the baking sheet and transfer to the oven.
- Roast for 15 to 18 minutes, or until salmon flakes easily with a fork.
- Remove from oven and set aside.
