Ingredients

The following ingredients have 4 Servings
  • 4 Tbsps olive oil
  • 2 carrots (roughly grated)
  • 2 large zucchini (halved lengthways and sliced)
  • 1 red pepper (cut into narrow strips)
  • 1 yellow pepper (cut into narrow strips)
  • 5 scallions (cut into thin rings)
  • 2 Tbsps Crème fraiche
  • 4 Wheat Tortillas
  • 4 leaves round Lettuce
  • Chives (for tying)

Instruction

  • Heat the olive oil in a pan and gently fry the carrots, courgettes, peppers and spring onions for around 10 minutes. Season with a little salt and ground black pepper and stir in the crème fraîche.
  • If desired, heat the tortillas following the instructions on the packet. Then lay a lettuce leaf on top of each tortilla and divide the vegetables between them. Roll up the wraps and tie with chives. Cut on the diagonal and serve immediately.
