Ingredients
The following ingredients have 4 Servings
- 4 Tbsps olive oil
- 2 carrots (roughly grated)
- 2 large zucchini (halved lengthways and sliced)
- 1 red pepper (cut into narrow strips)
- 1 yellow pepper (cut into narrow strips)
- 5 scallions (cut into thin rings)
- 2 Tbsps Crème fraiche
- 4 Wheat Tortillas
- 4 leaves round Lettuce
- Chives (for tying)
Instruction
- Heat the olive oil in a pan and gently fry the carrots, courgettes, peppers and spring onions for around 10 minutes. Season with a little salt and ground black pepper and stir in the crème fraîche.
- If desired, heat the tortillas following the instructions on the packet. Then lay a lettuce leaf on top of each tortilla and divide the vegetables between them. Roll up the wraps and tie with chives. Cut on the diagonal and serve immediately.
